Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, mix in rice vinegar, sugar, salt, and sesame oil. Allow to cool.

Cook the Spam
Slice the Spam into 8 equal pieces. In a skillet over medium heat, cook the Spam slices until crispy and golden brown on both sides. Drizzle with soy sauce during the last minute of cooking for added flavor.

Assemble the Musubi
Place a sheet of nori on a clean surface. Wet your hands to prevent sticking and take a portion of sushi rice (about 1/4 cup) and shape it into a rectangle. Place a slice of cooked Spam on top of the rice, then top with another portion of rice. Fold the nori around the rice and Spam, sealing it with a little water.

Repeat
Repeat the assembly process with the remaining ingredients. Optionally, sprinkle furikake on the rice before sealing.

Serve
Slice the musubi into bite-sized pieces and serve immediately or wrap in plastic wrap for later.
