Marinate the Chicken
In a large bowl, combine soy sauce, brown sugar, minced garlic, grated ginger, salt, and black pepper. Add the chicken breasts and coat them well. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the chicken is marinating, chop the bell peppers into bite-sized pieces and set them aside. If using fresh pineapple, cut it into chunks.

Cook the Chicken
In a large skillet, heat olive oil over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and cook for about 5-7 minutes on each side or until fully cooked. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add the bell peppers and pineapple chunks. Sauté for about 3-5 minutes until they are slightly tender.

Combine and Serve
Return the chicken to the skillet, pour the reserved marinade over the chicken and vegetables, and cook for an additional 2-3 minutes until everything is heated through. Garnish with sliced green onions before serving.
