Crust and Filling
Method
Preparation
- 1
Prepare the Crust
Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar. Mix well until the crumbs are evenly coated with butter.
- 2
Form the Crust
Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let it cool completely.
- 3
Make the Filling
In another mixing bowl, beat together the softened cream cheese and the remaining 3/4 cup of granulated sugar until smooth and creamy. Add in the vanilla extract and lemon juice, mixing until fully incorporated.
- 4
Combine and Fold in Whipped Cream
Gently fold in the whipped cream into the cream cheese mixture until well combined and fluffy.
- 5
Fill the Crust
Pour the filling into the cooled graham cracker crust, smoothing the top with a spatula.
- 6
Chill
Refrigerate the pie for at least 4 hours, or until set. Top with fresh fruit or chocolate shavings before serving, if desired.
