Melt the Chocolate
In a microwave-safe bowl, combine dark chocolate and coconut oil. Microwave in 30-second intervals, stirring in between until melted and smooth.

Add maple syrup, vanilla extract, and eggs to the melted chocolate mixture. Whisk until fully combined.

In a separate bowl, mix almond flour, cocoa powder, baking powder, and salt until well combined.

Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Preheat the oven to 180°C (350°F). Grease a muffin tin or individual ramekins with coconut oil.
