Prepare the Rub
In a bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.

Rub the Pork
Rub the spice mixture all over the pork shoulder, ensuring it is evenly coated. Let it sit for at least 1 hour, or overnight in the refrigerator for a deeper flavor.

Rest the Meat
Once cooked, remove the pork from the smoker and let it rest for at least 30 minutes before pulling.

Pull the Pork
Using two forks or your hands, shred the pork into bite-sized pieces.

Mix in Sauce
In a large bowl, combine the pulled pork with apple cider vinegar and barbecue sauce to your liking.

Serve
Serve the pulled pork on Rotella kaiser buns with additional barbecue sauce if desired.
