Prepare the Tofu
Drain the tofu and press it between paper towels to remove excess moisture. Cut it into bite-sized cubes.

Coat the Tofu
In a bowl, toss the tofu cubes with cornstarch until evenly coated.

Fry the Tofu
Heat vegetable oil in a frying pan over medium-high heat. Once hot, carefully add the tofu cubes in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Sweet Sauce
In a small saucepan, combine soy sauce, brown sugar, rice vinegar, sesame oil, and minced garlic. Bring to a simmer over medium heat, stirring until the sugar dissolves. Let it cook for another 2-3 minutes.

Drizzle the sweet sauce over the fried tofu. Garnish with chopped green onions and sesame seeds before serving.
