Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips, about 1/4 inch thick.

Dry the Potatoes
After soaking, drain the potatoes and pat them dry using a clean kitchen towel or paper towels to remove excess moisture.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the correct temperature.

Fry the Potatoes
Carefully add a batch of the dried potato strips to the hot oil, being cautious not to overcrowd the pot. Fry for about 4-5 minutes, or until golden brown.

Drain and Season
Remove the fries from the oil and use a slotted spoon to drain them on paper towels. Immediately sprinkle with salt to taste.

Repeat
Repeat the frying process with the remaining potato strips until all are cooked.

Serve
Serve the hot French fries in a basket, garnished with extra salt if desired.
