Dry the Potatoes
Drain the soaked potatoes and pat them dry with a clean kitchen towel or paper towels until they are completely dry.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil reaches the proper temperature.

Fry the Potatoes
Carefully add the dried potato strips in small batches to the hot oil. Fry them until they are golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels.

While the fries are still hot, sprinkle them with salt, black pepper, and garlic powder to taste. Toss to coat evenly.
