    Slice the beef, chicken, pork, or shrimp into thin pieces. Chop the green onions and slice the mushrooms.

    In a large pan or wok, heat the vegetable oil over medium heat. Add the sliced meat and cook until browned and cooked through. Remove from the pan and set aside.

    In the same pan, add water and bring to a boil. Add the rice noodles and cook according to package instructions. Drain and set aside.

    In the pan, add the soy sauce, mirin, and sugar, stirring to combine. Add the cooked meat, mushrooms, and cooked noodles, tossing everything together.

    Add the chopped green onions and season with salt and pepper to taste. Stir well and cook for an additional 2-3 minutes, allowing the flavors to meld.
