Infuse the Cream
In a saucepan, combine heavy cream and the vanilla bean (split and scraped). Heat over medium until just simmering. Remove from heat and let it sit for 15 minutes to infuse the vanilla flavor.

Prepare the Custard Base
In a mixing bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and thick. Gradually whisk in the infused cream, removing the vanilla bean pod.

Chill
Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Berry Topping
In a small bowl, gently toss the fresh mixed berries with a bit of sugar if desired and let them sit for about 10 minutes.

Brûlée the Top
Sprinkle a thin layer of brown sugar evenly over the chilled custards. Use a kitchen torch to caramelize the sugar until it forms a crispy top. Let it sit for a minute to harden.
