Calzone Preparation

Prepare the Filling
In a large skillet, heat olive oil over medium heat. Add onions, green peppers, and mushrooms. Sauté until softened, about 5-7 minutes. Stir in the diced grilled chicken, garlic powder, salt, and black pepper. Cook for an additional 2-3 minutes, then remove from heat.

Mix the Cheeses
In a bowl, combine ricotta cheese, mozzarella cheese, and provolone cheese. Mix well and set aside.

Assemble the Calzone
Preheat your oven to 475°F (245°C). Roll out the pizza dough on a floured surface into a large circle. On one half of the dough, layer the cheese mixture followed by the chicken and vegetable mixture. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.

Bake the Calzone
Place the calzone on a baking sheet lined with parchment paper. Brush the top with olive oil and cut a few small slits in the top to allow steam to escape. Bake in the preheated oven for 15-20 minutes, or until golden brown.

Serve
Remove from the oven and let cool for a few minutes before slicing. Serve warm with marinara sauce on the side, if desired.
