Preheat your oven to 425°F (220°C).

Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into bite-sized cubes.

In a large bowl, toss the potato cubes with olive oil, salt, black pepper, and paprika until evenly coated.

Spread the seasoned potatoes on a baking sheet in a single layer. Bake for 25-30 minutes or until crispy and golden brown, flipping halfway through.

Remove the potatoes from the oven and sprinkle the shredded cheddar cheese over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
