Prepare the crust
Preheat your oven to 325°F (163°C). In a bowl, mix together 1.5 cups of crushed graham crackers, 1/2 cup of melted butter, and 1/4 cup of granulated sugar. Press the mixture into the bottom of a 9-inch springform pan.

Mix the cheesecake filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add the sugar, mixing until well combined. Then add the sour cream and vanilla extract, continuing to mix until smooth. Finally, add the eggs one at a time, mixing gently after each addition.

Bake the cheesecake
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

Cool and chill
Turn off the oven and let the cheesecake cool in the oven with the door cracked open for about 1 hour. Then refrigerate the cheesecake for at least 4 hours, or preferably overnight.

Serve
Remove the cheesecake from the springform pan and slice it into pieces. Serve plain or with your favorite toppings such as fruit, chocolate sauce, or whipped cream.
