Prepare the Crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove and let cool.

Make the Filling
In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar and continue to beat until well combined. Add in the sour cream and vanilla extract, mixing until smooth.

Add the Eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

Bake the Cheesecake
Pour the cream cheese filling over the cooled crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the edges are set but the center is slightly jiggly.

Cool and Chill
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight before serving.
