Prepare the Jasmine Rice
Rinse the jasmine rice under cold water until the water runs clear. Combine the rice and 1.5 cups of water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Prepare the Protein
Cut the beef, chicken, or pork into bite-sized pieces. Season with salt and pepper. Heat 1 tablespoon of vegetable oil in a pan over medium-high heat. Add the protein and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

Stir-fry the Vegetables
In the same pan, add another tablespoon of vegetable oil. Add minced garlic and ginger, and stir-fry for 30 seconds until fragrant. Add the broccoli and baby corn, and stir-fry for about 3-4 minutes until tender-crisp.

Combine Everything
Add the cooked protein back to the pan with the vegetables. Stir in the soy sauce and cashew nuts. Cook for an additional 2-3 minutes, stirring constantly, until everything is heated through.

Serve
Fluff the jasmine rice with a fork and serve it on plates. Top with the cashew nut stir-fry mixture.
