Rinse the catfish fillets under cold water and pat them dry with paper towels. Season with salt and black pepper, then set aside.

In a shallow bowl, pour the buttermilk. In another bowl, combine the flour, cornmeal, cajun seasoning, and a pinch of salt.

Coat the Catfish
Dip each catfish fillet into the buttermilk, allowing any excess to drip off. Then dredge in the flour-cornmeal mixture, ensuring an even coating. Set aside on a plate.

In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
