In a large bowl, mix together the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

In a medium bowl, combine the pitted black cherries, sugar, cornstarch, lemon juice, and vanilla extract. Toss gently to combine and set aside.

Preheat your oven to 375°F (190°C).

On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim the edges.
