Make the Biscuits
Preheat your oven to 450°F (230°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1/2 inch thick and cut into biscuits. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

Prepare the Gravy
In a large skillet over medium heat, cook the sausage until browned. Sprinkle the flour over the sausage and stir to combine, cooking for 1-2 minutes. Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the gravy thickens, about 5-7 minutes. Season with salt, black pepper, and red pepper flakes.

Split the biscuits in half and ladle the sausage gravy over the top. Serve warm.
