Gradually whisk in the beer and milk, ensuring there are no lumps. Continue to cook while stirring until the mixture thickens, about 5-7 minutes.

Remove the pot from heat and stir in the shredded cheddar and Monterey Jack cheese until melted. Add hot sauce, salt, black pepper, paprika, garlic powder, and onion powder. Mix until well combined.

Add the cooked macaroni to the cheese sauce, stirring to coat the pasta evenly.
