    Prepare the Roast

    Place the chuck roast in a slow cooker. Sprinkle the onion soup mix over the roast, then add beef broth. Season with salt and black pepper. Cover and cook on low for 8-10 hours, or until the beef is tender and easily shredded.

    Make the Onion Dip

    In a mixing bowl, combine softened cream cheese, sour cream, and diced onions. Mix well until smooth and creamy. Set aside.

    Assemble the Melt

    Once the roast is done, shred the beef with two forks. Preheat the oven to 375°F (190°C). Slice the French bread in half lengthwise and place it on a baking sheet.

    Layer and Bake

    Spread the onion dip on each half of the French bread. Top with the shredded beef and then sprinkle shredded cheddar cheese over the top. Bake in the oven for 15-20 minutes, or until the cheese is melted and bubbly.
