Marinate the Pork
In a bowl, combine pork shoulder, soy sauce, brown sugar, minced garlic, lime juice, fish sauce, and black pepper. Mix well and let marinate for at least 2 hours or overnight in the refrigerator.

Prepare the Grill
Preheat the grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

Grill the Pork
Remove the pork from the marinade and let any excess drip off. Place on the grill and cook for 6-8 minutes on each side or until fully cooked and charred. Use a meat thermometer to check that the internal temperature reaches 145°F (63°C).

Rest the Pork
Once cooked, remove the pork from the grill and let it rest for 5-10 minutes before slicing.
