Prepare the Turkey
Thaw the turkey in the refrigerator for 24 hours for every 4-5 pounds. Once thawed, remove the giblets and pat the turkey dry with paper towels.

Season the Turkey
Rub the turkey all over with olive oil. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, salt, black pepper, and thyme. Rub the spice mixture evenly over the turkey.

Prepare the Smoker
Soak the applewood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Turkey
Place the soaked applewood chips in the smoker box. Place the turkey on the smoker rack, breast side up. Smoke for 30-40 minutes per pound, or until the internal temperature reaches 165°F (74°C).

Rest and Serve
Once the turkey is done, remove it from the smoker and let it rest for 20-30 minutes before carving and serving.
