Preparation of Shrimp

Prepare the Shrimp
Rinse the shrimp under cold water and pat them dry with paper towels. Make sure they are fully peeled and deveined.

Make the Tempura Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the ice water, stirring gently until just combined. Do not overmix; the batter should be lumpy.
Frying Shrimp

Heat the Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Coat the Shrimp
Dip each shrimp into the batter, allowing any excess to drip off.

Fry the Shrimp
Carefully place the battered shrimp into the hot oil, a few at a time, without overcrowding. Fry for 2-3 minutes or until the batter is golden brown and crispy.

Drain the Shrimp
Using a slotted spoon, remove the shrimp from the oil and drain on paper towels. Repeat the process until all shrimp are fried.
Dipping Sauce Preparation

Mix the Dipping Sauce
In a small bowl, combine the soy sauce, rice vinegar, mirin, and grated daikon radish. Stir well to combine.
Serving

Arrange the fried shrimp on a serving platter and serve immediately with the dipping sauce on the side.
