Prepare the Coating
In three separate shallow bowls, set up a breading station. In the first bowl, place the all-purpose flour. In the second bowl, beat the two eggs. In the third bowl, combine the bread crumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and black pepper.

Bread the Cheese Sticks
Take each mozzarella stick and first coat it in flour, shaking off any excess. Next, dip it in the beaten eggs, allowing the excess to drip off. Finally, coat it in the bread crumb mixture, pressing gently to adhere. Repeat this process for all mozzarella sticks.

Freeze the Cheese Sticks
Once all cheese sticks are coated, place them on a baking sheet lined with parchment paper and freeze for at least 30 minutes to an hour. This step helps to prevent the cheese from melting too quickly while frying.

Heat the Oil
In a deep pot or large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can check the temperature using a kitchen thermometer.

Fry the Cheese Sticks
Carefully add a few frozen mozzarella sticks to the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Serve
Serve the mozzarella sticks hot with marinara sauce for dipping.

Sauté the Garlic
In a saucepan, heat the olive oil over medium heat. Add the minced garlic cloves and sauté for about 1-2 minutes until fragrant but not browned.

Combine Ingredients
Add the canned crushed tomatoes, dried oregano, salt, black pepper, and sugar to the saucepan. Stir well to combine.

Simmer the Sauce
Allow the sauce to simmer on low heat for about 15-20 minutes, stirring occasionally. If using fresh basil, add it towards the end of the cooking time.

Serve
Remove from heat and serve warm as a dipping sauce for the mozzarella sticks.
