Mochi Preparation

    Mix Ingredients

    In a mixing bowl, combine sweet rice flour, water, sugar, and a pinch of salt. Stir well until the mixture is smooth and free of lumps.

    Cook the Mochi

    Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap. Microwave on high for 2 minutes. Take it out, stir well, then microwave again for another 1-2 minutes until the dough is sticky and slightly translucent.

    Cool the Mochi

    Once cooked, let the mochi dough cool for a few minutes. Dust a clean surface with cornstarch to prevent sticking.

    Shape the Mochi

    Once the mochi is cool enough to handle, transfer it to the dusted surface. Flatten the dough with your hands or a rolling pin to about 1/4 inch thick. Use a round cutter (about 3 inches in diameter) to cut out circles.

Assembly

    Fill with Ice Cream

    Scoop out small balls of ice cream and place them in the center of each mochi circle.

    Seal the Mochi

    Fold the edges of the mochi over the ice cream and pinch to seal. Make sure there are no gaps to prevent the ice cream from leaking out.

    Freeze the Mochi

    Place the filled mochi on a tray lined with parchment paper and freeze for at least 2 hours or until firm.
