Prepare Sushi Rice

In a fine-mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a rice cooker or a pot, combine the rinsed sushi rice and water. Cook according to the rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes until the water is absorbed.

In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds to dissolve sugar and salt. Once the rice is cooked, transfer to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Using kitchen scissors, cut the nori sheets into small strips or flakes.

In a bowl, combine the chopped nori, white sesame seeds, black sesame seeds, dried fish flakes, dried seaweed flakes, salt, and sugar. If desired, add wasabi powder for an extra kick.
