Preparation for the Chips

    Peel and cut the russet potatoes into thick strips (about 1/2 inch wide) to form chips. Rinse the cut potatoes in cold water to remove excess starch, then pat dry with paper towels.

    Fry the Chips

    In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add half of the potato strips to the hot oil, ensuring not to overcrowd the pot. Fry for about 5-7 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels. Repeat with the remaining potato strips.

    Season the Chips

    Sprinkle hot chips with salt to taste while they are still warm.

    Prepare the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in cold sparkling water until the batter is smooth and thick enough to coat the back of a spoon.

    In another large, heavy-bottomed pot, heat vegetable oil over medium-high heat to 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully add the battered fish fillets to the hot oil, cooking in batches if necessary. Fry for about 4-5 minutes or until the batter is golden brown and the fish is cooked through. Remove with a slotted spoon and drain on paper towels.

Serving

    Serve the crispy battered fish alongside the golden chips. Optionally, add tartar sauce and lemon wedges for extra flavor.
