Marinate the Pork
In a large bowl, mix the soy sauce, brown sugar, minced garlic, pineapple juice, and black pepper. Add the pork loin and ensure it is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the oven to 375°F (190°C). Place the marinated pork loin on a baking dish and pour the remaining marinade over it. Bake for 25-30 minutes or until the internal temperature reaches 145°F (63°C). Let it rest for 10 minutes before slicing.

Prepare the Rice
In a large saucepan, bring 4 cups of water to a boil. Add 2 cups of white rice and 1 tsp of salt. Stir once to prevent sticking, then cover and reduce the heat to low. Simmer for 18-20 minutes or until the rice is tender and the water is absorbed.

In a large skillet or wok, heat 1 tbs of sesame oil over medium-high heat. Add minced garlic and sauté for 30 seconds. Add bell peppers, broccoli, and carrots. Stir-fry for 5-7 minutes until the vegetables are tender but still crisp. Add 2 tbs of soy sauce and stir to combine.
