Cooking the Rice

    Prepare the Rice

    Rinse the jasmine rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and water. Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for another 5 minutes.

Frying the Ingredients

    In a large skillet or wok, heat the vegetable oil over medium heat.

    Cook Vegetables

    Add the diced carrot, red bell pepper, and frozen green peas to the skillet. Stir-fry for about 5-7 minutes until the vegetables are tender.

    Scramble the Eggs

    Push the vegetables to one side of the skillet, crack the eggs into the other side, and scramble them until fully cooked. Mix the eggs with the vegetables.
