Cooking Instructions
Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
Add Bell Peppers and Zucchini
Add sliced bell peppers and zucchini to the skillet. Sauté for about 5-7 minutes until they start to soften.
Incorporate Tomatoes and Spinach
Add the halved cherry tomatoes and fresh spinach to the skillet. Cook until the spinach wilts, about 2-3 minutes.
Combine Pasta and Sauce
Add the cooked pasta to the skillet, tossing to combine. If the mixture seems dry, add a splash of reserved pasta water.
Season and Serve
Stir in grated Parmesan cheese, salt, black pepper, and fresh basil. Toss to combine and serve hot.
