Method

Preparation of Misir Wot

    Sauté the Base

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Ginger

    Add minced garlic and ginger to the pot, and sauté for an additional 2 minutes until fragrant.

    Cook the Lentils

    Stir in the berbere spice mix, then add the red lentils and vegetable broth. Bring to a boil, then reduce heat to low and simmer for about 25-30 minutes until the lentils are tender.

    Season

    Add salt to taste and let the stew simmer for another 5 minutes.

    Combine Ingredients

    In a large bowl, combine torn injera, diced tomatoes, sliced red onion, minced garlic, and diced jalapeno.

    Make the Dressing

    In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.

    Toss Salad

    Pour the dressing over the salad and toss gently to combine. Allow to sit for about 10 minutes for flavors to meld.
