Prepare Ingredients

Preheat your oven to 400°F (200°C). Wash and chop the potatoes into bite-sized pieces. Trim the ends of the Brussels sprouts and cut them in half. Mince the garlic.

Season the Pork

Rub the pork tenderloin with olive oil, Dijon mustard, minced garlic, salt, black pepper, and fresh thyme.

Roast the Vegetables

Toss the potatoes and Brussels sprouts with olive oil, salt, and pepper. Spread them out on a baking sheet.

Combine and Roast

Place the seasoned pork tenderloin in the center of the baking sheet with the vegetables. Roast in the preheated oven for about 25-30 minutes, or until the pork reaches an internal temperature of 145°F (63°C).

Rest and Serve

Remove the baking sheet from the oven and let the pork rest for 5-10 minutes before slicing. Serve the pork slices with the roasted potatoes and Brussels sprouts.
