Prepare the Chicken
Preheat the oven to 425°F (220°C). In a small bowl, mix the olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and black pepper. Rub this mixture all over the chicken, ensuring it's well-coated.

Roast the Chicken
Place the chicken in a roasting pan and pour the lemon juice over it. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Let it rest for 10 minutes before carving.

Prepare the Frites
While the chicken is roasting, soak the potato sticks in cold water for at least 30 minutes. This helps to remove excess starch and makes them crispier.

Cook the Frites
Drain the potatoes and dry them thoroughly. Toss with olive oil, salt, black pepper, and paprika. Spread them in a single layer on a baking sheet. Bake in the same oven as the chicken for the last 30 minutes of roasting, turning halfway through, until golden and crispy.

Carve the chicken and serve it alongside the frites for a delicious meal.
