Dumpling Preparation

    Prepare the Filling

    In a large mixing bowl, combine the ground pork, chopped oyster mushrooms, minced black garlic, grated ginger, chopped green onions, soy sauce, and sesame oil. Mix well until all ingredients are evenly incorporated.

    Assemble the Dumplings

    Take a dumpling wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half to create a pocket, and pinch the edges to seal. Repeat with the remaining wrappers and filling.

    Cook the Dumplings

    You can either steam, boil, or pan-fry the dumplings. For steaming, place them in a steamer basket lined with parchment paper and steam for about 8-10 minutes. For boiling, cook them in a pot of salted water for about 5-7 minutes until they float. For pan-frying, heat a bit of oil in a skillet, add the dumplings, and fry until golden brown on the bottom, then add a splash of water, cover, and steam for another 5-7 minutes.

    Serve the dumplings hot with a dipping sauce made of soy sauce, vinegar, and a dash of chili oil if desired.
