Prepare the Ingredients
Start by washing and trimming the Brussels sprouts. Cut them in half. Rinse the cauliflower florets and set aside. Chop the bacon into small pieces.

Cook the Bacon
In a large skillet over medium heat, add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the drippings in the skillet.

Fry the Brussels Sprouts
In the same skillet with the bacon drippings, add the halved Brussels sprouts. Fry for about 8-10 minutes until they are golden brown and tender, stirring occasionally. Season with black pepper.

Toast the Cauliflower
In another skillet, heat olive oil over medium heat. Add the cauliflower florets and sauté for about 6-8 minutes until they are golden and tender.

Combine Everything
Once the Brussels sprouts and cauliflower are cooked, combine them in a large bowl. Add the cooked bacon, horseradish root, and mustard. Mix well to combine.

Sprinkle the gouda cheese over the mixture and toss gently to incorporate.
