    Prepare the Pork

    Preheat the oven to 400°F (200°C). Season the pork tenderloin with salt and pepper, and rub with mustard. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the pork on all sides until browned, about 4-5 minutes.

    Roast the Pork

    Transfer the skillet to the preheated oven and roast the pork for about 20-25 minutes or until the internal temperature reaches 145°F (63°C). Remove from the oven and let rest for 5 minutes before slicing.

    Prepare the Vegetables

    While the pork is roasting, peel and chop the potatoes into small cubes. Slice the onion and shred the cabbage. Dice the apple.

    Cook the Vegetables

    In a separate pan, heat a tablespoon of olive oil over medium heat. Add the potatoes and onions, cooking until the potatoes are golden and tender, about 10 minutes. Add the cabbage and apple, stirring occasionally for another 5-7 minutes until the cabbage is wilted.

    Combine and Serve

    Slice the pork tenderloin and serve it on a plate alongside the sautéed vegetables. Garnish with fresh nasturtium leaves for a peppery flavor and vibrant color.
