    Prepare the Duck Breast

    Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season both sides with salt and black pepper.

    Cook the Duck Breast

    In a cold skillet, place the duck breasts skin side down. Turn the heat to medium and cook for about 8-10 minutes until the skin is crispy. Flip and cook for another 4-6 minutes for medium-rare. Remove from the skillet and let rest.

    Sear the Scallops

    In the same skillet, add olive oil over medium-high heat. Season the scallops with salt and pepper. Sear the scallops for 2-3 minutes on each side until golden brown and opaque in the center. Remove from heat.

    Prepare the Spinach and Mushrooms

    In the same skillet, add a bit more olive oil if needed. Sauté the oyster mushrooms for about 3-4 minutes until tender. Add the spinach and cook until wilted.

    Plating

    On a plate, place a bed of crispy lentils. Slice the duck breast and arrange on the side. Add the seared scallops, sautéed spinach, and oyster mushrooms. Drizzle with atole and garnish with edible farm flowers.
