Duck and Marinade

Method

Roasting the Duck

  1. 1

    Prepare the Marinade

In a bowl, combine the Chinese five spice powder, soy sauce, honey, minced garlic, grated ginger, salt, and black pepper. Mix well to create a marinade.

  2. 2

    Marinate the Duck

Rinse the duck under cold water and pat dry. Rub the marinade all over the duck, making sure to get it inside the cavity. Let it marinate in the refrigerator for at least 4 hours, preferably overnight.

  3. 3

    Roast the Duck

Preheat the oven to 375°F (190°C). Place the marinated duck on a roasting rack in a roasting pan. Roast for about 1.5 to 2 hours, until the skin is crispy and the internal temperature reaches 165°F (74°C), basting occasionally with the pan juices.

  4. 4

    Rest and Carve

Once cooked, remove the duck from the oven and let it rest for at least 15 minutes before carving.
