    Hydrate and combine

    In a large mixing bowl, whisk together flour and salt. In a separate bowl, bloom the yeast in warm water for about 5 minutes, then whisk in olive oil.

    Pour the wet ingredients into the dry and mix until a shaggy dough forms. Turn onto a lightly floured surface and knead 8-10 minutes until smooth and elastic. Lightly oil a clean bowl, cover, and let rise in a warm spot until doubled, about 60-75 minutes.

    Divide and rest

    Punch down the dough and divide into two equal portions. Shape into balls and let rest for 10 minutes before stretching.

    In a small saucepan, heat olive oil over medium heat. Add minced garlic and sauté 30-60 seconds until fragrant.

    Add crushed tomatoes, oregano, and salt. Simmer gently for 15-20 minutes to blend flavors. Remove from heat and set aside.
