Prep and parboil

Wash and cut potatoes into 1-inch cubes. Place in a pot and cover with salted water. Bring to a boil and simmer for 5–6 minutes until just tender. Drain well and spread on a towel to dry thoroughly.

In a large bowl, toss the potato cubes with olive oil, salt, black pepper, minced garlic, chopped rosemary, and thyme until evenly coated.

Heat a large skillet over medium-high heat. Add the seasoned potatoes in a single layer and cook, turning occasionally, until deeply golden and crispy on all sides, about 12–15 minutes.

Remove from heat and let rest 1–2 minutes before serving to finish crisping.

Spicy Mayo

Make the spicy mayo base

In a small bowl, whisk together mayonnaise, hot sauce, and lemon juice until smooth.

Whisk in smoked paprika and crushed red pepper flakes. Taste and adjust seasoning with a pinch of salt if needed. Chill in the fridge while potatoes finish cooking.

Serve the crispy herb potatoes warm with a dollop or drizzle of the spicy mayo on the side or toss potatoes lightly in mayo for dipping.
