    Prepare dough

    Let the pizza dough come to room temperature, then shape into a 12-inch circle on a lightly floured surface. If using a dough ball, stretch gently to preserve air pockets.

    Make tomato sauce

    In a skillet, heat 1 tablespoon of Imr olive oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds. Stir in crushed Early Girl tomatoes, salt, and sugar. Simmer 15-20 minutes, stirring occasionally, until sauce thickens slightly. Remove from heat and stir in torn basil leaves.

    Prepare toppings

    Tear the stracciatella cheese into large shreds and set aside. Keep an extra drizzle of Imr olive oil ready for finishing, if desired.

    Assemble pizza

    Preheat oven to 500°F (260°C) with a pizza stone or heavy baking sheet inside. Brush the stretched dough with the remaining 2 tablespoons of Imr olive oil (or use 1 tablespoon if you prefer). Spread a thin layer of tomato sauce over the dough. Evenly distribute the torn stracciatella cheese over the sauce. Finish with a crack of black pepper to taste.

    Bake and finish

    Bake on the preheated stone or sheet for 8-12 minutes, until the crust is crisp and cheese is molten with light blistering. Remove from oven, finish with fresh basil leaves (optional), and drizzle with 1 tablespoon more Imr olive oil. If desired, add a pinch of salt to taste.
