Soft Serve Base

Seasonal Flavor Infusions

Method

Prepare Soft Serve Base

  1. 1

In a medium saucepan, combine 4 cups whole milk, 2 cups heavy cream, 1 cup granulated sugar, and 0.25 tsp kosher salt. Warm over medium-low, whisking constantly until the sugar fully dissolves and the mixture is steaming but not boiling.

  2. 2

    Finish Base

Remove from heat and whisk in 2 tsp vanilla extract. Let cool briefly, then refrigerate until completely cold (at least 2 hours, or overnight).

Flavor Infusion (choose one or rotate seasonally)

  1. 3

    Add chosen flavor infusion

When the base is cold, add 0.75 cup strawberry puree or 0.5 cup pumpkin puree or 0.5 cup mango puree to the base, then whisk until smooth.

  2. 4

    Spices (optional)

If using cinnamon or nutmeg, whisk 0.5 tsp cinnamon or 0.25 tsp nutmeg into the base with the puree.

Churn and Freeze

  1. 5

    Churn in soft serve machine

Pour the cooled base into your soft serve machine and churn according to the manufacturer’s instructions, typically 20–25 minutes, until thick and creamy.

Serve and Garnish

  1. 6

    Serve

Scoop soft serve into bowls or cones. Immediately top with rainbow sprinkles. Drizzle with chocolate syrup and sprinkle chopped nuts if desired.
