Method

Preparation and marination

    Preheat grill

    Preheat a wood-fired grill or high-heat grill to 450-500°F (232-260°C). If using a wood-fired oven, heat accordingly.

    Prep trout

    Pat trout fillets dry with paper towels and brush both sides with olive oil. Season lightly with salt and black pepper.

    Make citrus-herb marinade

    In a small bowl, whisk together lemon juice, minced garlic, thyme leaves, smoked paprika, and a pinch of salt and pepper to form a bright citrus-herb marinade.

    Marinate trout

    Brush trout with a portion of the marinade. Let rest 15 minutes at room temperature to allow flavors to meld.

    Prepare broccolini

    Trim woody ends from the broccolini. In a bowl, toss with olive oil, salt, pepper, garlic powder, and lemon zest until evenly coated.

    Roast/grill broccolini

    Spread broccolini on a grill-safe pan or directly on the grill rack. Roast 6-8 minutes, turning occasionally, until charred in spots and tender-crisp.

Grill and plate

    Grill trout

    Place trout fillets on the grill skin-side down if skin-on. Grill 3-4 minutes, then carefully flip and cook another 3-4 minutes, until opaque and flaky. Baste with remaining marinade during cooking.

    Rest and serve

    Remove trout from heat and let rest 2 minutes. Plate with wood-roasted broccolini. Garnish with lemon wedges and extra thyme if desired.
