Prepare the rub
In a small bowl, mix together the rub: kosher salt, brown sugar, smoked paprika, garlic powder, onion powder, black pepper, ground cumin, and chili powder.

Apply rub to pork
Pat pork shoulder dry. Rub the surface evenly with the spice blend until all sides are coated. Drizzle or brush with 1 tablespoon olive oil if desired.

Sear the pork
Heat a large skillet over medium-high heat with a little oil. Sear the pork on all sides until browned, about 4-6 minutes total. Transfer to slow cooker or roasting setup.

Slow-cook the pork
Place the seared pork in a slow cooker. Add 1/4 cup apple cider vinegar and a splash of water or broth. Cook on low for 8-10 hours or until pork is tender and shreds easily.

Shred and sauce
Remove pork, shred with forks, and mix in 1 cup of barbecue sauce. Return to slow cooker to keep warm for the final minutes.

Make slaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl whisk mayonnaise, 2 tablespoons apple cider vinegar, sugar, and 1/2 teaspoon salt. Toss dressing with vegetables until evenly coated.

Split sandwich buns and toast lightly on a hot griddle or oven until golden brown.

Pile the pulled pork onto each bun, top with a generous spoon of slaw, and drizzle with additional barbecue sauce if desired. Serve immediately.
