Preheat the oven to 425°F (220°C). Line a baking sheet with parchment.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cayenne pepper (if using) until evenly distributed.

Stir in the shredded cheddar cheese until evenly distributed.

Make a well in the center and pour in the buttermilk; stir with a fork just until the dough comes together.

Turn the dough out onto a lightly floured surface. Lightly dust with flour, and knead gently a few turns to bring it together.

Pat or roll the dough to about 1 inch thick. Use a biscuit cutter to cut rounds; gather scraps and re-roll if needed.

Place the rounds on the prepared baking sheet and bake for 12-15 minutes, until the tops are golden and biscuits are cooked through.
