Pat the chicken dry inside and out. In a small bowl, whisk together minced garlic, lemon zest and juice, kosher salt, pepper, and olive oil with dried rosemary or oregano to create a paste.

Rub the paste all over the chicken, including under the skin and inside the cavity if possible. Let sit for 10 minutes to meld flavors.

Roast until the thickest part of the chicken reaches 165°F (74°C), about 60 minutes. If the skin browns too quickly, tent with foil.

Carefully remove the brick and let the chicken rest 10–15 minutes before carving to redistribute juices.

Crispy Potatoes

While the chicken roasts, parboil the potato halves in salted water for 5–7 minutes until just tender. Drain well.

Toss the potatoes with olive oil, smoked paprika, garlic powder, salt, and pepper until evenly coated.

Wood-Roasted Broccolini

Toss the broccolini with olive oil, minced garlic, salt, pepper, and red pepper flakes if using.

Drizzle with lemon juice (if using) and transfer to a serving platter.
