Prepare the Curtido

    Make the Curtido

    In a bowl, combine shredded cabbage, grated carrots, and sliced red onion. In a separate bowl, mix together white vinegar, oregano, salt, and water. Pour the vinegar mixture over the vegetables and toss well. Let it sit for at least 30 minutes to marinate.

Prepare the Garlic Mayo

    Make the Garlic Mayo

    In a small bowl, combine mayonnaise, minced garlic cloves, and lemon juice. Stir until well mixed and set aside.

Cook the Burger

    Form and Cook the Pork Burger

    In a bowl, mix ground pork with salt and black pepper. Form into patties. Heat a grill or skillet over medium heat and cook the pork patties for about 5-6 minutes on each side or until fully cooked.

    Cook the Eggs

    In a separate pan, cook sunny side up eggs to your liking.

Assemble the Burger

    Assemble the Burger

    Toast the burger buns. Spread garlic mayo on the bottom bun, add the pork burger patty, a slice of smoked queso cheese, a generous amount of curtido, and top with a sunny side up egg. Finish with the top bun and serve.
