    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 inch wide.

    Soaking the Potatoes

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Heating the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Frying the Potatoes

    Drain and pat the soaked potatoes dry. Carefully add a handful of fries to the hot oil and fry until golden brown, about 5-7 minutes. Remove with a slotted spoon and place on paper towels to drain.

    While the fries are still hot, season them with kosher salt and black pepper to taste.

    Serve the hand-cut fries hot with house condiments like ketchup, mayonnaise, and hot sauce on the side.
