    Prepare the Rice

    Rinse the black rice under cold water until the water runs clear. In a large saucepan, combine the black rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and the broth is absorbed.

    Cook the Calamari

    While the rice is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Then, add the sliced calamari and cook for 2-3 minutes, stirring occasionally until they are opaque.

    Add Tomatoes and Season

    Add the halved cherry tomatoes to the skillet with the calamari. Season with salt and black pepper. Cook for an additional 3-4 minutes until the tomatoes soften slightly.

    Combine and Serve

    Once the black rice is cooked, fluff it with a fork and mix it into the skillet with the calamari and tomatoes. Stir in the chopped parsley. Serve warm, garnished with lemon wedges.
