Make the Crostada Dough
In a large bowl, mix the flour, sugar, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Stir in ice water, a tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic, and refrigerate for at least 30 minutes.

Prepare the Spiced Pear Filling
In a large bowl, combine the sliced pears, brown sugar, cinnamon, nutmeg, lemon juice, and vanilla extract. Toss until the pears are well coated.

Assemble the Crostada
Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface into a 12-inch circle. Transfer to a parchment-lined baking sheet. Spoon the spiced pear filling onto the center, leaving a 2-inch border. Fold the edges of the dough over the pears, pleating as you go.

Bake the Crostada
Bake for 35-40 minutes, or until the crust is golden brown and the pears are tender. Let it cool slightly before serving.

Slice the crostada and serve warm with a dollop of fig jam and a scoop of vanilla ice cream.
